Homemade Wood-Fired Pizza
We make fresh to order Neapolitan pizzas from homemade dough on our wood-fired pizza oven. Our oven was made by hand, out of brick, clay, and straw. The dough is made weekly from scratch by our resident pizza maker Janet Shea & is cooked to perfection by our resident master fire builder, Jim Shea, her husband. Janet has been baking and making homemade sourdough bread for decades, and has worked on crafting Neapolitan pizza on their own wood-fired oven at home for the past 3 years.
What is Neopolitan pizza?
Our pizza has very few ingredients. Our proprietary sourdough yeast starter, water, salt, flour, a simple sauce made from San Marzano tomatoes, fresh mozzarella cheese and fresh basil. It is formed by hand. It has a puffy crust and a crisp bottom with a good char, and a classic "soupy" middle as the cheese and sauce meld together. It is cooked quick and hot in a 900 degree wood-fired oven in as fast as 60-90 seconds.
We feature a few pizza options weekly: Margherita pizza (cheese, sauce & basil) is always available, and we rotate in fresh ingredients such as pepperoni, peppers, onions, basil, garlic, fresh arugula, sausage, and whatever fun things may be in season. Pizzas are approx. 10" in diameter and start at $11 each plus toppings. They are for one person, or two to share if you just want a snack. Pizzas are for dine-in only.
