We're close. We got word of our conditional license being approved. We just need a couple more docs and we will be licensed!! We have been busy doing construction on the space. This past weekend we built and have just about completed our cold room, which will serve as a space for us to cold-crash, carbonate, and make lager style beers as well as store our filled kegs so everything stays super fresh. This was a huge step towards making great beer, and is just as important as the brewing equipment itself. We have also taken steps towards completing our fermentation room, which will be a nice sized room we can keep cool to ferment at the perfect temperatures.
We have also officially begun to fill our kegs. We'll be ordering more so that we can be all set and ready to go when the license comes through. We want to have beer ready for release when we open, and we want to have something ready so we can deliver to some local bars and restaurants.
Right now we have two beers that will be ready for release over the next 2 weeks. One is our IPA called "The Ruckus" which is smelling and drinking beautiful. This is going into brite tank to be carbonated tomorrow. The other is our Altbier we are calling "ctrl-alt-del"--a german style darker beer fermented with tart cherry and nicely hopped.
We can't wait to open!!
